Falafel

  • So what is the history of this tasty little fritter?  “The first known appearance of legume fritters (aka falafel) in the Middle East appears to be in Egypt, where they were made from dried white fava beans (ful nabet) and called tamiya/ta-amia (from the Arabic for ‘nourishment’); these fritters were a light green color inside. Many attribute tamiya to the Copts of Egypt, who practiced one of the earliest forms of Christianity. They believed that the original state of humankind was vegetarian and, therefore, mandated numerous days of eating only vegan food, including tamiya.”
  • Copts fasten (become vegan) almost half the year, this is why they invented & developed so many delicious & nutritious vegan dishes such as Falafel/Tamiya. It’s a delicious form of vegan fast food that is much lighter and better for your heart than burgers and fries.  These fried vegetarian fritters are traditionally served  along with hummus and tahini. 
  • When falafel is made the traditional way, is indeed a vegan food; it’s a great source of protein for people who have cut meat out of their diet. It’s relatively low in fat and has no cholesterol if you fry it in heart-healthy grapeseed oil. And if you top it with veggies in a pita, it becomes a filling and nourishing meal! Sure beats a Big Mac, if you ask me.

INGREDIENTS

  • 1 pound (about 2 cups) dry chickpeas
  • small onion, roughly chopped
  • 1/2 chopped leek or few spring onions
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh coriander
  • 12 cloves garlic 
  • 2 slices of white bread
  • 1  tsp salt
  • 2 tsp cumin
  • 1 tsp ground coriander
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper or chilli powder
  • 1/4 tsp black pepper
  • Pinch of ground cardamom
  • Vegetable oil for frying (grapeseed, canola, and peanut oil work well)

YOU WILL ALSO NEED

  • Food processor, skillet & non-stick skillet
Servings: 40-50 falafels

Method:
1. Pour the chickpeas into a large bowl and cover them by about 3 inches of cold water. Let them soak overnight or even better for 24 hours and change the water few times for your falafel to turn out right;. They will double in size as they soak – you will have between 4 and 5 cups of beans after soaking. Canned beans are too tender and contain too much moisture to achieve the right consistency. Don’t cook the beans, because this will result in a mushier and denser falafel, which is not the proper texture.

2. Drain and rinse the chickpeas well. Pour them into your food processor along with the rest of the ingredients.

3. Pulse all ingredients together until a rough, coarse meal forms. Scrape the sides of the processor periodically and push the mixture down the sides. Process till the mixture is somewhere between the texture of couscous and a paste. You want the mixture to hold together, and a more paste-like consistency will help with that ... but don't over process, you don't want it turning into hummus!

4. Once the mixture reaches the desired consistency, pour it out into a bowl and use a fork to stir; this will make the texture more even throughout. Remove any large chickpea chunks that the processor missed.

5. Cover the bowl with plastic wrap and refrigerate for 1-2 hours.

6. Note: Some people like to add baking soda to the mix to lighten up the texture inside of the falafel balls. I don’t usually add it, since the falafel is generally pretty fluffy on its own. If you would like to add it, dissolve 2 tsp of baking soda in 1 tbsp of water and mix it into the falafel mixture after it has been refrigerated.

7. Fill a skillet with vegetable oil to a depth of 1 ½ inches. I prefer to use cooking oil with a high smoke point, like grapeseed. Heat the oil slowly over medium heat. Meanwhile, form falafel mixture into round balls or slider-shaped patties using wet hands or a falafel scoop. I usually use about 2 tbsp of mixture per falafel. You can make them smaller or larger depending on your personal preference. The balls will stick together loosely at first, but will bind nicely once they begin to fry

8. Note: if the balls won't hold together, place the mixture back in the processor again and continue processing to make it more paste-like. Keep in mind that the balls will be delicate at first; if you can get them into the hot oil, they will bind together and stick. If they still won't hold together, you can try adding 2-3 tbsp of flour to the mixture. If they still won't hold, add 1-2 eggs to the mix. This should fix any issues you are having.

9. Before frying my first batch of falafel, I like to fry a test one in the centre of the pan. If the oil is at the right temperature, it will take 2-3 minutes per side to brown (5-6 minutes total). If it browns faster than that, your oil is too hot and your falafels will not be fully cooked in the centre. Cool the oil down slightly and try again. When the oil is at the right temperature, fry the falafels in batches of 5-6 at a time till golden brown on both sides.

10. Once the falafels are fried, remove them from the oil using a slotted spoon. Let them drain on paper towels. Serve the falafels fresh and hot; they go best with a plate of hummus and topped with creamy tahini sauce. You can also stuff them into a pita with salads & pickles.

  • Troubleshooting: 
  • If your falafel is too hard/too crunchy on the outside, there are two possible reasons-- 1) you didn't process the mixture enough-- return the chickpea mixture to the processor to make it more paste-like. 
  • 2) the chickpeas you used were old. Try buying a fresher batch of dried chickpeas next time.
There is a rare medical deficiency called G6PD, which is a hereditary enzymatic deficiency that can be triggered by fava beans.

Oxygen

 God versus evolution

What a beautiful design .. who designed it? .. who created it? .. above all who controls & powers it? .. each electrons moves in its own circle at the right direction and right speed .. who controls them? .. atoms out of  control .. will result in a nuclear explosions which will end the world .. atoms without power will also result in the end of the world.
Air we inhale is made of roughly composed of 78% nitrogen + 21% oxygen  O
2
.. we need oxygen to live .. oxygen on it is own is poisonous .. who created oxygen? ..  evolutionists may say it was just happened as a chemical reaction etc .. note the difference between created and generated  .. O
2
is created by a power who has design, creation, powering & control capabilities .. then it is generated by a grand system called photosynthesis .. which I will write on it in another blog 
Who created nitrogen? ... who created the right balance between the two gases for us to breath?  ..  who maintains the right balance of these two gases all the time? ..  .. who maintains pumping oxygen & nitrogen in the atmosphere? .. God or evolution

It is the grand Creation, Control & Completion of God

If you watch cooking on TV then you must have watched chefs cooking with liquid nitrogen .. notice chefs always wearing industrial protective goggles & gloves .. to protect their eyes & hands from burning by liquid nitrogen.

So, we breath a combined gasses of one is poisonous on its own (oxygen)  and the other is useless to us and if distilled is burning (nitrogen).
 

Human can only survive few minutes without oxygen .. if this was the result of a havoc random of evolution events ..  just things happened by itself with no plans, creation, control & completion behind it .. then welcome to my world of evolution which will lasts for only few minutes:

few minutes of 100% oxygen which will kill us all ..
few minutes with no oxygen which will kill us all ..
few minutes of 100% nitrogen which will kill us all ..
few minutes of a mixes of any gases which either poisonous or with no benefits for us still kill us all ..

Can you not see a loving compassion God behind this extra ordinary creation, balance & control? .. a God who maintains  the right balance 24/7 so his beloved human survive .. not only 24/7 .. but 60/24/7 .. (for those reading my blog from other countries & cultures 60/24/7 is an abbreviation for 60 minutes per hour/ 24 hours a day/ 7 days a week)

So we thank God for:
1. creating oxygen
2. creating nitrogen
3. maintaining the perfect balance between them 60/24/7
4. pumping oxygen & nitrogen 60/24/7 (will write on this on a future blog)

In a mother's womb were two babies. One asked the other: "Do you believe in life after delivery?"

The other replies, "why, of course. There has to be something after delivery. Maybe we are here to prepare ourselves for what we will be later.

"Nonsense," says the other. "There is no life after delivery. What would that life be?"
...
"I don't know, but there will be more light than here. Maybe we will walk with our legs and eat from our mouths."

The other says "This is absurd! Walking is impossible. And eat with our mouths? Ridiculous. The umbilical cord supplies nutrition. Life after delivery is to be excluded. The umbilical cord is too short."

"I think there is something and maybe it's different than it is here." the other replies, "No one has ever come back from there. Delivery is the end of life, and in the after-delivery it is nothing but darkness and anxiety and it takes us nowhere." 


"Well, I don't know," says the other, "but certainly we will see mother and she will take care of us."

"Mother??" You believe in mother? Where is she now?

"She is all around us. It is in her that we live. Without her there would not be this world."

"I don't see her, so it's only logical that she doesn't exist."

To which the other replied, "sometimes when you're in silence you can hear her, you can perceive her."

I believe there is a reality after delivery and we are here to prepare ourselves for that reality....

God: Let me see, the death angel was at your bed this morning & I had to send one of My Angels to battle him for your life. I let you sleep through that

Man (humbled): OH

GOD: I didn’t let your car start because there was a drunk driver on your route that would have hit you if you were on the road.

Man: (ashamed)

God: The first person who made your sandwich today was sick & I didn’t want you to catch what they have, I knew you couldn’t afford to miss work.

Man (embarrassed): Okay

God: Your phone went dead bcuz the person that was calling was going to give false witness about what you said on that call, I didn’t even let you talk to them so you would be covered.

Man (softly): I see God

God: Oh and that foot massager, it had a shortage that was going to throw out all of the power in your house tonight. I didn’t think you wanted to be in the dark.

Man: I’m Sorry God

God: Don’t be sorry, just learn to Trust Me…. in All things , the Good & the bad.

Man: I will trust You.

God: And don’t doubt that My plan for your day is Always Better than your plan.

Man: I won’t God. And let me just tell you God, Thank You for Everything today.

God: You’re welcome child. It was just another day being your God and I Love looking after My Children…

Spiritual : I am a bird in the sky أنا طير في السما

chicken curry


Ingredients
4 tbsp butter or margarine
onions (finely chopped)
12 garlic cloves (minced)
1 kilo skinless chicken thighs (cut to bite pieces)
1 tbsp flour

كيلو وراك فراخ بدون جلد مقطعه قطع صغيره ١
 ملعقه كبيره  ١دقيق 
Spices:
12 cloves
12 black peppercorns
2 tsp black cumin seeds - if you can not find black just use brown
2 tbsp coriander seeds
2 tsp red hot chilli powder
2 tsp turmeric powder
1 tsp ground cinnamon
1/2 tsp cayenne pepper 
2 tbsp hot curry powder or gram masala (I used Sharwoods brand)
5cm fresh ginger (grated)
2 tsp salt
12 whole cardamom seeds (1/2 green & ½ brown) if you can not find brown just use green 
bay leaves
1-2 cinnamon stick

Others
1 tin  540g pineapples chunks (I used Tesco value) will use the pineapple and the juice
1 can 142g tomato paste
1 cup raisins
500g sour cream/yoghurt (I used Tesco value yoghurt)
2 very ripe bananas (sliced)

 موز ناضجين جدا تقطع شرائح ٢


Method
1. heat butter and shallow fry the onions till soft & gold
2. add chicken &  garlic and stir for 3 minutes (make sure you do not brown them) you will see the chicken colour changed from red to white
3. add all spices and stir for 1 minute, then add flour and stir
4. add pineapple juice, pineapple chunks, tomato paste, raisins & banana and bring to the boil, as soon as it boils turn the heat to minimum then add the youghurt - simmer for 15 minutes
الطريقه :
١. سخن الزبده أو السمنه وأقلي البصل لحد مالونه يصفر علي نار هاديه
٢. أضيف الفراخ والثوم وقلب  الي أن يتغير لونها من أحمر الي أبيض
٣. أضيف وقلب كل البهارات لمده دقيقه واحده ثم أضيف الدقيق
٤. أضيف قطع الأناناس ومائه ومعجون الطماطم والزبيب والموز وأول مابيتدي يغلي أضيف الزبادي وطي النار ليغلي بهدوء 15 دقيقه 
Note
1. pick out big spices before serving, such ad bay leaf & cinnamon stick 
2. Curry always taste better next day, so you may refrigerate it till next day or freeze it for another day

شيل قطع البهارات الكبيره مثل ورق الاورو وعصا القرفه قبل تقديم الأكل  ١.
٢. الكاري دائما طعمه بيقي أحسن تاني يوم, ولذلك يمكن أكله تاني يوم أو تجميده ليوم أخر
